Sponge Cake

I got this recipe from an Indonesian friend. This is not the super soft chiffon cake. It is sponge cake, so the texture is just like the sponge. Great for your tea time.

Ingredients:

4 Egg yolks (L size)
5 Egg whites (L size) 5
Fine Sugar 125 gm
Cake Flour 175gm
Baking powder 1 tsp
Juice @ syrup 75ml (any flavor, I used ice cream soda syrup)
Corn Oil 75ml

Method:

(A)
1.
In a bowl, using hand whisk, whisk yolks and sugar till sugar dissolves.
2. Add in flour and syrup gradually, stir well and leave it for a while.

(B)
3. In another bowl, beat egg whites
using an electric mixer, beat till the whites are soft peaks.
4. Heat the oven to 170 C /340 F.

(C)
5. Add in (B) in (A) gradually. Stir well.

6. Take 1/3 of (C) and pour in another bowl, add in corn oil, mix well and add this mixture into (C) and stir well again. This is to make sure the oil mix well with all the mixture.
7.Pour the mixture into a 18 cm chiffon tube pan .
Bang the pan on the table to get rid of bubbles.
8.Bake for 45 minutes.

Sweet Potato Pie Recipe

Sweet Potato Pie Recipe.

I got this nice recipe from a friend and would like share it here. It's not very sweet, suitable for tea for the whole family. Even my 2 year old son loves it very much:)


Ingredients for pie crust
4 cups all purpose flour
1 tablespoon sugar
1 teaspoon salt
1 1/2 cups shortening
1 egg
1/2 cold water
1 tablespoon vinegar

Method:
1.
Mix shortening, flour and salt in a bowl, make into breadcrumbs.
2. In another bowl, beat the egg and add cold water and vinegar. Beat the ingredients until well mixed.
3. Add (2) in (1) and knead till you get soft dough.
4. Divide the dough into 4, make ball shape and wrap with cling wrap. Keep in refrigerator.

Ingredients for the filling
4 tablespoon unsalted butter or margarine
1/2 cups sugar
3 eggs - separate the yolk and white part
1/4 teaspoons ground cinnamon
1/4 teaspoon ground allspice
1/8 teaspoon ground nutmeg

2 cups boiled, mashed sweet potato
1 cup fresh milk

Method:
1) Beat sugar and butter in a bowl. Then add in yolks one by one, and all the spices.
2) Add in mashed sweet potato and fresh milk. Mix well.
3) In another bowl,
using electric mixer, beat the white eggs until frothy.
4) Add in the frothed white eggs into the first bowl, mix well.

To prepare the Sweet Potato Pie:
1) Roll the pie dough for the base. Fix in the pie dish and poke with fork.
2) Fill in the filling and decorate with your own style. I used the excess dough to decorate my pie.
3) Bake in oven at 175 C for about 40 minutes. However it depends on your oven. I used big oven so I baked for 70 minutes to get the pie filling cooked. To know whether your pie has cooked or not, poke the filling with fork, if the fork dry, then your pie has cooked.

Spicy Fried Macaroni

My own fried macaroni recipe...

Ingredients :

250g macaroni
80g Minced meat
3 tbs chilli paste
5 shallots
2 garlics
2 tbs tomato sauce
2 tbs oyster sauce
2 tbs sweet soy sauce
1/2 tablespoon sugar
salt to taste
Vegetables (cubed carrot, button mushroom, chinese cabbage)

Method :

1. Boil macaroni and drain it.
2. Heat oil in a pan.
3. Add in pounded shallots and garlics. Fry till fragrant.
4. Add in the chilli paste. Fry till some oil appear.
5. Add in minced meat. Stir till the meat is cooked.
If too dry, add little bit water.
6. Add in boiled macaroni and stir till well mixed.
7. Add in tomato sauce, oyster sauce, and sweet soy bean sauce.
8. Add in sugar and salt.
9. Add in the vegetables, and stir until all ingredients well mixed.

Onion and Cheese Bun

BUN
184g bread flour
46g cake flour
3g instant dried yis
12g sugar
4g salt
23g honey
18g egg yolk (1 egg yolk)
35g butter (I used margarine)
138ml fresh milk ~ lukewarm

TOPPING
Margarine
Bombay Onion ~ diced
Spring onions ~ chopped
Mozarella cheese ~ to sprinkle

1. Cream the margarine.
2. Add onion and spring onion. Mix well.

Method :

1. Place flour, instant yeast, sugar, salt honey and egg yolk in a mixing bowl.
2. Turn on the mixer and pour the lukewarm milk a bit at a time till just incorporate.
3. Add in the butter and continue kneading.
4. Pour more milk if necessary and continue kneading till a soft and smooth dough is formed.
5. Make the dough into a round ball and place it in a bowl sprinkled with a bit of flour. Wrap the bowl with a clean plastic bag and let the dough prove till double the size.
6. Punch down the dough and divide into a 50g balls each. Arrange on the baking tray. Make a slit on top using a sharp knife. Wrap the tray with plastic bag and let the dough rise again.
7. Put the topping and sprinkle with mozarella cheese.
8. Bake in a preheated oven till golden brown.
The temperature should depend on your oven...as for me, I baked at 180 C for 45 minutes. If you are using small oven, use lower temperature (170 C /175 C) and bake for
30 minutes.

Paprik Chicken

This is a Malaysian Recipe. It has nice taste and smells good because contains kaffir leaves and lemon grass.

Paprik Chicken

Ingredients:
A) Cut into small pieces:

300 gm chicken ( I just used chicken with bone)
100 gm carrot
100 gm broccoli
100 gm cauliflower
50 gm green capsicum
1 Onion- cut into rings

B) For Sauce
2 tbs dark soy sauce
5 tbs tomato sauce
5 tbs chili sauce
3 tbs oyster sauce
5 kaffir leaves
1 lemon grass [pounded]
1 tbs lemon juice
5 small green chillies [pounded]
3 pieces garlics [pounded]
1/2 cup water
little oil
salt

Method
1. Heat a bit of oil, add in garlics, kaffir leaves and lemon grass. Fry till fragrant.
2. Add in chicken and stir well.
3. Add in carrot, dark soy sauce, chili sauce, tomato sauce, oyster sauce and little bit salt. Let it until nearly cooked.
4. Add in all the vegetables and stir well.
5. Add in lemon juice, stir well.
6. That's it. Serve with plain white rice.

Cheese Brownies

This is one of my family's favourite. It's really yummy!

Cheese Brownies

Ingredients :
180 gm. Butter - melted
275 gm. brown sugar
(for me this is too sweet, lessen it if you like less sweet)
3 eggs
1 tsp. vanilla essence
120 gm. self-raising flour
70 gm. cocoa powder

Cheese filling:
250 gm. cream cheese
45 gm. butter
80 gm. icing sugar
1 egg
(you can put a tsp of lemon juice if you like)
Some chocolate chips to sprinkle on top

Method:
(1) Mix melted butter with brown sugar until well combined.
(2) Add in eggs, one at at ime, mixing well after each addition. Stir in vanilla essence.
(3) Gently fold in flour and cocoa powder and stir till smooth.
(4) For cheese filling: beat cream cheese, butter and icing sugar until well combined. Add in egg, beating well.
(5) Pour half of brownie batter into loaf pan, then pour in cheese filling. Then pour the balance brownie batter on top of cheese filling. Sprinkle top with chocolate chips.
(6) Bake in preheated oven 170C for 40 min.s or until cooked
